Steps
- Build base dilution seawater per ripening plan (start weakest).
- Add rice wash or diluted LAB before oils or acids hit the tank.
- Add FPJ last; stir gently; avoid whipping excess foam.
- Allow warm-weather ferments 12–24 h; extend if overcast or cool.
- Strain if precipitate forms; spray dusk or dawn.
- Clean tank jets after salt sprays to prevent clogging.
