Steps
- Remove stems, cores, and bruises; dice fruit for dense packing.
- Layer fruit and sugar, pressing each layer to express juice.
- Cover with cloth; monitor overflow during warm weather.
- After activity slows, strain through muslin; discard marc to hot compost.
- Bottle, date, and store cool-dark; smell should stay fruity-acidic.
- Optional second soak of marc in light brine for weaker secondary press—label separately.
